Looks good Pete.
Have to laugh though ... I cooked up a couple of "monster" chops a couple of days ago. But, cooked them at 550 degrees about 4 inches above the felt line.

Agreed.
Had a beautiful day Saturday at Scott County Park Campground along Pride Lake. Cooked 107lbs of shoulder, celebration of life party for a co-worker who passed away on our unit from cancer. Two overnight cooks, first was LBGE and WSM for 21 hrs total. Second was WSM for 17 hrs. One day was reserved for 3 gallons of sauce and rub.

It was awesome, the ladies threw it down with homemade everything, slaw, tater salad, beans, cookies, cupcakes, baklava, brownies, etc etc etc. Started at 0930, ended with a ranger walk through for deposit back at 2030. Pulled the truck in, left everything, showered, and crashed after several Busch lights. Rollin on I-80 suited up at 0830 for Des Moines Sunday, just got back to clean up my roasters tonight. A labor of love. So yeah, I'm good with the al fresco for a bit. lolBrandonQuad Cities

Sorry to hear of your friends passing Brandon. Sounds like a great celebration of her extraordinary life. I truly believe you get out what you put in, somehow. You earned some more points in my book FWIW. Kudos to you, my friend.

I'm a big fan of the think poke chop. McCormick's Smokehouse Maple (Grill Mates) seasoning is my go to seasoning method. I apply a nice healthy dose on both sides. It adds a nice maple sweetness to the chop, and creates a thin little bark to it. Try it some time. As far as I can see....there ain't nothing wrong with the way you did it however.Ellijay GA with a Medium & MiniMax

@northGAcock the maple angle sounds very good. Maple and pork are a natural pairing. I'll have to give that one a try. Truth is, with nice chops like these, you can hardly go wrong.
