Packer Virgin (that didn't sound right)

I picked up a 12.62 pound choice packer from Gordon food services, it is real flexible and did a 90° bend test, I plan on trimming it well leaving a quarter inch of fat on the bottom then rubbing it with DP Cow Lick then low and slow it at 225 to 240 indirect until it's yummy. A couple of quick observations the flat is only 1 inch at it's skinniest part and the point is 5/6 inches at its thickest, I plan on putting the point toward the back of my XL and I'm hopeing to make burnt ends. We hope to eat around 5 PM tomorrow after the Michigan State basketball game, any ideas on what time I should put that on the smoker ?

At that low temp, I'd plan on cooking it for 16 hours. If it gets done before that, you can FTC until you're ready to eat.Dave - Austin, TX

I would wrap it in foil when it hits the stall around 165 internal temp. I don't think you will achieve 200 by 3 PM if you don't do that. You could use paper too if you have it.Dave - Austin, TX

I plan on wrapping with some broth around 5/6 hours or 165/170, I am worried that the skinny part of the flat will be rendered useless if I go straight through at 240 uncovered/wrapped. I'm a noob with the packer.

I have a packer brisket about the same size as yours on my LBGE that I started at 4pm yesterday, running 225 with the PartyQ, it is at 185 now. I think it will be tough for you to 205 by 3pm unless you wrap…where is your temp now?LBGE

I am 7 hrs in at 275 dome and its probing between 161 and 170, I am wrapping with in the next hour. We plan on eating at 5:30 which is 5 and 1/2 hours from nowCharlotte, Michigan XL BGE

Thank You! I have done four flats before this but this came out so much better, my wife loved it as well as the other nine folks that joined us. We ate every bit of it and this has made the rotation, next time I will try a prime packer vs this choice.
