having a meeting tomorrow night to pass on some information to some students a year behind me. Expecting 15ish guys and half have tried my 'Q before. Going with what a know for a good app. BBQ nachos. Got a 10# shoulder, 3# Colby and pepper jack cheese shredded! SBR and spicy rendezvous sauces, sliced jalapeños, rubbed with victory lane sweet bbq rub this afternoon. Picked up some new peach wood at the Memphis BBQ supply store today (anyone near the mid south should check it out). Planning to go on at 11-12 with peach and cherry wood between 225-250 and hopefully go 15 hrs then FTC till 6 tomorrow. Working until 2-3 tomorrow so really relying on the egg to do its thing.

I went there, 2004-2008. Lot's of great things about Memphis that I miss. Wife doesn't really miss living there though. I enjoyed it for the most part, especially Memphis in May.In Manchester, TNVol For Life!

A little over 8 hours in and it ran at 240-255 overnight with no problems but sitting at IT of 183 now. Not sure what to do since I'm leaving for work in an hour and may not be back for 4-5 hours. May just cut down the temp to about 200-210 and hope it stalls. Most of mine cook for 1.5hr/lb so maybe this will slow down. Just don't want to serve mushMemphis, TN ----> Chattanooga, TN
