APL Honey Glazed Chicken on the MM

Options
This is one of the simpler recipes in APL's book, but man is it good!!  Spatch a chicken, glaze with a mixture of honey, vinegar, serrano chiles, and parsley, then a compound butter made with garlic, parsley, shallots, and lemon zest during the last few minutes.  Combine the glaze, cpd butter, and chicken drippings on a cutting board while the chicken rests and you've got a great tasting bird!  Cooked raised direct at 400 degrees for about an hour and 15 miniutes.
