I wanna make Juicy Lucys...tips?

I've never made them before. Can someone please explain the process to me? I'll be cooking them on the Egg obviously!
Whats a good kind of cheese to use?
I could also use a good sauce recipe to use instead of boring old ketchup. Something that goes good with caramelized jalepeno and onion.
Any input is welcome and thanks a bunch

A real Jucy Lucy is american cheese only. Use what you like for cheese. No press is needed to make them. Make a pouch in the middle of the hamburger and add cheese. Cover with more hamburger. Simple and easy! Be careful when they come off the grill. The cheese stays insanely hot. Will burn you lips if not careful. Enjoy!!!!"The pig is an amazing animal. I made these once and they were delicious. A tip I had read about was to poke a few holes with a toothpick in one side of the stuffed burger to allow for steam release and to keep the burger from bulging in the middle. I just mixed up some stuff I had on hand.Smokey bacon mayo, ketchup, smokey dijon honey mustard, smoked paprika, smoked garlic salt, and dill relish.

I have enough problems remembering to wait before eating pizza. trying to remember to wait for a juicy lucy to cool down below blistering heat ruins the rest of the meal is outside of the scope of what I can expect my brain to remember. Food comes off grill and I want to begin devouring it immediately. I'm sorry, but I'm mentally challenged on some things. My tastebuds are very impatient. I know it's a character flaw, but at least I acknowledge it. )
