Rocky Mountain oysters: Offal cook 2

My butcher got me a pair of sheep family jewels. Good lord they are large! I threw them on to smoke for an hour. My plan is to slice them, bread, and deep fry, and serve with some kind of mayo sauce. Maybe the chili garlic sauce. I also am cooking some hot peppers so if it's really terrible I can sterilize my mouth.
If anyone has any input/advice I would love to hear it. I have pix of the pre-cooked goods but they're almost NSFW, don't want to ruin anyone's appetite!

You sir are a man amongst men. I am curious to read your view of them.

I would say you and the sheep have big balls.

Around this area, we remove the membrane around the outside and any sections of connective tissue. They are then soaked in a brining solution for several hours and sliced, breaded and deep fried. Very good on a sandwich. Personally, I prefer calf, turkey or pig, but done up right they are all very good. For those of you wondering they taste a lot like a pork tenderloin or fritter if that is what it is called in your area.

@Ozzie_Isaac @Tinyfish thanks they actually smelled just fine, not what Id expect!
@bettysnephew interesting - that sounds like a good plan for next time
Not sure I want to make a dinner out of this so I have a ribeye on backup.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle -
If those balls are tasting better then your ribeye I can help you out.

Come to think of it what I am calling a pork tenderloin is kind of a Midwest thing. You take a 1/2" slice of pork loin and pound it out until it is at least twice the size you started with, bread it with egg wash and cracker crumbs or you favorite breading and deep fry it until golden. Place it on a bun with your favorite condiments with onions and dill pickle slices. A truly heavenly sandwich.

You are defining one who eats testicles as a man amongst men, lol )Ozzie_Isaac said:You sir are a man amongst men. I am curious to read your view of them.

I've not had sheep RMOs, only pig (maybe they should be called "barnyard oysters"?) My college roommate had them cooked up for me the first time, they weren't bad, reminded me of breaded mushrooms. The second time, he "cleaned" them in the sink, fresh off the porkers, and that disturbed me a bit more. They weren't large, again they were the size of breaded mushrooms. Maybe they were very young pigs, because a large boar, yeah, two could feed a crowd.I'd, uh, skip the mayo sauce, but that's just me.:-S___________
Curry smells a hell of a lot better than a Big Mac, just sayin'

@travisstrick I'm going to post a pretty plated shot shortly. The pre-cooked shot I'll save to the end. Kind of gross.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

These were some seriously large balls. Each was about the size of my fist. I sliced, breaded, and deep fried. they turned out like a soft chicken mcnugget, with roughly as much flavor. maybe less.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

Looks good. Love the gif.Be careful, man! I've got a beverage here.

Not that I'm a connoisseur of sorts but these aren't Rocky Mountain Oysters they're Lamb Fries. It's been years since I've had either one. But, as I remember the Lamb Fries weren't sliced just fried whole. I recall both having the texture of fried chicken liver. No they don't taste like chicken. ~:>LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

:-O -
@nphuskerfl These were damned big balls. that lamb was a MAN when he lost his junk! i don't think lamb fry did these justice - maybe sheep nut scallopine??@mattman3969 and @tarheelmatt Hopefully some day we'll all meet up at an eggfest or something and we can fire up an egg for "not the usual suspects."so, here are the prep pics. hopefully no one loses their appetite. the final pic is what I ultimately ate for dinner. Sheep 'nads just didn't do it for me!Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

Honestly I should have never used the words "smell, throw, and rocky mountain oysters" in the same sentence.

How do you start that conversation with your butcher?
