Sliced up my first batch of homemade bacon. Did some in hickory and some in cherry wood. This certainly is not your store bought bacon. Very pleased with my first try. Wife gave it the "this is really good!" I will be doing this again. Used Buckboard cure. I think I need to search and find other cures to try.

I got an A-Maze-N smoker for christmas, so last weekend I did 4 slabs - Ruhlman's Maple Cure.I did 2 slabs cold smoked for 12 hours w/ Apple, and 2 slabs hot smoked with Apple.Here's the two slabs about to go on the cold smoke after a week in the cure.Honestly, I think they both Rock and can't make up my mind which I like betterThe cold smoked isn't as intense a smoke flavor but the texture is better when fried b/c it's not twice cooked..The hot smoked is wonderfully intense and complex.My issue now is finding Pork Belly that is 50/50 lean. The locally raised stuff is like 80% fat; while the slabs I get at the asian market are 80% meat.This batch was from the asian market, and it is too lean, so it cooks up meaty and chewy, rather than having a good crisp, crunch.
