Stuffed pork loin

Stuffing a pork loin tonight for the first time. I figure I need to pull it off at 140 internal temp. Any suggestions on setup and temp?

Due to the leanness of the loin, I find that they do very well between 325-375 degrees indirect. If I wrap it with bacon I err more toward 375 degrees. If I do not bacon wrap I err more toward 325 degrees. Just seems to work real well for me.

This is officially a go to now. Stuffed with spinach, onion, roasted garlic, fig preserve and Gorgonzola. Light season all, 350 until 145. Turned out great. I appreciate the help SGH!Bluffton, SC LBGE, SBGE, Thermapen

I didn't know there was a rule on no forks. I will work on that.

There's no fork rule. It's a joke that's had some legs for a few months. No foul.
