Marinated in fridge for 24 hours.
Smoke the xl because it had some lump in it... with a chunk of oak. Indirect at 315 at the dome. Came out really good. The jerk sauce/marinade is excellent.
Medium, and XL eggs in Galloway NJ. Just outside of Atlantic City.

Grandpa Eddies. I think you can find it online.. but I got lucky finding this on the side of the road.It is great but if you really like it hot I would add some bonnets or habaneros. Walkers wood is good stuff. Also, dizzy pig has a rub, fire walker. I'm sure there are others, those I've tried. We actually honeymooned in Jamaica many moons ago. That's where I really came to love it. Had jerked everything, including goat.

I have to go heavy handed to get heat, but I like food pretty spicy. I also go heavy with swamp venom and I've read people think it's hot. -

Walkerswood is legit and the paste is very hot. They also make a medium paste that is hot for most palettes. I love the DP Firewalk but I wouldn't really call it a jerk rub.LBGE, CGW Swing Rack, Baking Steel. Mini-Max on the way.Boston MA

Usually with jerk I just do thighs hot and fast @nolaegghead .
I have been getting good at deboning and looking for excuses to keep doing it. Plus I really like how much flavor gets everywhere.

I typically jerk thighs as well, but I like my skin to be very crispy on jerk chicken.
I use walkerswood wet rub on the meat side of the thigh and a Jerk dry rub on the skin.

+1 on the Walkerswood thighs. Raised direct at 400 and you are in heaven a half hour later.

@DMW...I nearly wet my pants laughing at your comment. We honeymooned in St. Lucia, but our plane broke down in Montego Bay for about 6 hrs before we got there. It may have been the rum, but the jerk chicken at the airport was the best airport food I've ever had. Love me some jerk...chicken...
