I'm heading up to TN today for thanksgiving with my wife's family. They asked me to cook the turkey and I obliged. Brine with Alton Browns brine, but instead of ginger and allspice berries I used orange and lemon peels. I injected it and rubbed it with an herb butter. I smoked it with a little bit of pecan and black cherry wood on the egg at 325. It cooked for about 4.5 hours.

Nice job bro, it looks great... Did you have any issue with the breast finishing before the legs? Also, how much wood (chips or chunks) did you use and was it enough?

No wonder Ma wanted you to cook the Turkey. I bet that would even be good cold.

@Dillonjm I iced the breast for about 20 minutes before I put it on. It finished at 160 and 181 so pretty damn close. I used 3 chunks of black cherry and 1 chunk of pecan. I havent carved it yet so I don't know if there was enough smoke.1 large BGE, Spartanburg SC

@Dillonjm to give you an update the amount of wood I used was plenty for the level of smoke I wanted. The turkey was very moist and everyone loved it. I was told that I'm the official turkey maker for thanksgiving and Xmas from now on.1 large BGE, Spartanburg SC
