Still on the cool & cloudy side here today Got 3 chicken breast rubbed down with Bombay Currish waiting for the small to get going. These will go in the coconut curry dish later today.

Sautéing the carrots and peppers
Just added the onions, scallions and garlic
Now with the tomatoes,chicken stock,curry powder and coconut milk

Go to your local Indian market and get some chili powder. Pick up a few long red and long green chilis as well.

Looks superb!
+1 to what LS said. Buy some dried red chilis too just to play with some time. With this type of dish I would like the zingy heat of fresh green chilis.
Also, try to add the curry powder after the veg have sautéed for a bit. The spices take on a great flavor after being sautéed in oil briefly, vs being boiled in the dish's liquid ingredients.
