First Butt Cook In The Works

Doing 2 butts for a cokout today. Having a few friends over later today. First butt rubbed with EVOO then Dizzy Dust. Second butt injected with a mix of apple juice and BBQ sauce. The sauce is a homemade vinegar based sauce. Then some meat salt on the outside. Currently on the egg cooking at 250. Been on for 5 hours. Internal temp is 145. Just wrapped in foil. Hoping this works.

You should be ok, if you have to to get to 195 for pulled pork you could take it to 275° and won't hurt it. I like using yellow mustard, because it gives a better bark. I think you will find that the one you injected will have more flavor. Thats what I have found. I like using apple juice and bbq rub to inject with. More flavor. It looks good and it's hard to meet up a pork butt unless you over cook it. Good look and look forward to seeing the the finished product. @Ladeback69 those look amazing. I wrapped mine so as to have less bark. I like bark but prefer it to be cut completely off and eat on the side, basically chef snacks.
