Cooking filet mignon

Picked up 4 filets at whole foods. Egg already at 550. I like mine medium rare+. My wife and kids like medium well. How do I cook?

Yeah I know that but should I just go ahead and cook at high temp or should I try to wear and then pull down temp.

It's a little easier to reverse sear (cook indirect at like 225-250 and then open it up and sear). Are you using. Thermometer to measure or winging it ?Keepin' It Weird in The ATX FBTX

You can do them all at the same time that way too. Pull yours at like 115 and theirs at like130-135 then go nuclear and sear as fast as you can. I actually prefer to sear in cast iron so you can do that too if you have that option.Keepin' It Weird in The ATX FBTX

If you are already at 550 put there's on first and yours on 2 minutes later and move there steaks so you are putting nice grill marks and flip them all after 4 more minutes and then check them at 3 minutes to see where they are at; 134 for med rare and 140/145 for there's then tomorrow research reverse sear on this forum and book mark it for next time. Remember they will climb 5 to 7 degrees as you let them rest!Charlotte, Michigan XL BGE

Heh. I learned it a few years ago when I saw Steve Raichlen do it on his PBS show. Primal Grill or whatever. -
Alton brown did it on a Good Eats episode. I still havent tried it.

If you have CI pan or skillet - sear them in the pan. A few minutes in a very hot pan to develop a crust until they get to the right temp. Use the pan scrapings to make a sauce/demi glaze.
