1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 c. sugar
1 c. chopped pecans or walnuts
3 eggs
1&1/2 cup vegetable oil
2 cups mashed ripe bananas
1 8 oz can crushed pineapple, drained
2 tsp. vanilla extract[p]Combine flour, baking soda, cinnamon, salt, sugar and nuts in large bowl; mix well. Beat eggs in medium bowl. Add oil, bananas, pineapple and vanilla; mix well. Add to dry ingredients; stir just until moistened. Spoon into 2 greased and floured 5 x 9 inch loaf pans. 350 degrees for 65 minutes or until loaves test done. cool in pans for 10 minutes, remove to wire rack to cool completely. May wrap tightly and store in freezer. [p]btw...I make these up in the little tiny loaf pans and give them away at Christmas. They make great gifts for co-workers.[p]Terri
