It seems like there have been a lot of newbies joining since the holidays. I thought it may be appropriate for anyone that has a tip to pass it on. I'm no expert but I have ruined a meal or two since I started Egging a couple of years ago. I'll get it started:
TIP:
Always adjust your DFMT aka. Daisy Wheel so that when you open the lid, gravity/physics will not open or close it. Early on I ruined/accelerated a couple of low and slow cooks by taking a quick look and not checking the daisy wheel. I came back a hour or two later and the temperature had increased a great deal.
Both pictures show my setting for 350 degrees. Figure one will open up when I lift the lid. In the second picture, gravity and physics will keep it in place when the lid is lifted. I Hope this helps and is not too obvious.

Cook to temp, not time. "How long will it take to cook a xxxxxxxx" "Until it's done"

Catch your target dome temp on the "way up." It's way too hard to bring the egg down in temp once the ceramics get hot.

My tip is don't use the DMFT unless going 250n. KISS.

Make sure to take the clip off of the dome thermometer when cooking something big that might hit the probe. I learned the hard way.

When moving an Egg in a nest NEVER push it always pull it from the hinge in the back of the egg!!! I also will take a ratchet strap if moving a long way over rough terrain and strap it to the nest!!!! G M >-

When doing high temp cooks, remember to burp the egg once or twice before opening.---------------------------------------------------------------------------------Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.____________________Aurora, Ontario, Canada
