Bison Bacon Onion Burgers, from the land they call Big Sky

I've been going to Teds Montana Grill for years and have always loved their bison burgers so I thought I'd try some on my XL. I found some ground bison at the super market and whipped up the following recipe.
Ingredients:
-3 pounds of ground bison
-3 yellow onions
-2 shallots
-3 cloves of garlic
-2 tbs honey
- crushed rosemary
- Bacon, take a pack of bacon and cook it in the oven at 350 for 20 minutes.
-salt
Chop up the onions, shallots, and garlic and sweat them in a skillet for an hour with salt and crushed rosemary at low temp. Add half of the cooked bacon chopped up, the bacon fat, and two tablespoons of honey to the skillet at the end of the hour. Let cool and add to bison meat, let sit over night.
Make the patties and grill them for 5 min per side on your egg at 450 degrees.
Turned out awesome.
