Priced pork bellies at restaurant depot the other day and they were under $3/lb. (about 2.60). Gotta buy a case though, which is about 60lbs. SWMBO said no way (for now). Working on that.NOLA

started my first crack at bacon yesterday. Ordered from my Sysco rep so I got 13.24 kg. I paid $2/lb. Only prepped up 1 belly. The other is cryovaced so it can wait to see if I like this recipe. Here they are with the skin off and rubbed.
