Venison back strap

Ok everyone I'm new here an just got my geen egg an I will be smoking a boston butt tomorrow along with smoking or grilling which ever is best a venison back strap which is what I need help with. I would like to know temp to cook at how long and some marinades. Please help

I've been looking for a similar answer. The most common response I get is to cook direct, raised grid. Due to a low fat content in deer meat, It's probably best not to cook indirect. Low and slow tends to dry out lower fat meats. Good luck, and come back to let me know how it turns out.Athens, GA

I like to marinate back straps in Italian dressing. Cook on 500-600 degree heat direct for 6-8 min per side. We eat our venison medium so if you want it cooked mite you'd need to adjust accordingly.

If you have a thermapen,cook them until about 120 IT. I have done about 5 back straps this way and I won't cook them any another way. Also make up some brandy mushroom cream sause and I guaratee they will be the best way you have every cooked backstrapJefferson .GA.Been egging since 1985 on a medium egg

Is there any reason I shouldn't use a dry rub on the venison back strap?

With this high heat it burns just about every spice off of it except the salt. I have never used a rub on deer anyway. Used to use salt and pepper and dales sauce and wrapped in bacon for the years until I tried it this wayJefferson .GA.Been egging since 1985 on a medium egg

I would not even marinade it. You want to taste the deer. Just follow the link to the post I gave you on the steaks. Then search on you tube for a mushroom brandy cream sauce. You will not be disapointedJefferson .GA.Been egging since 1985 on a medium egg
