First Almonds, Now Ribs

Smoked another batch of almonds this morning. While they were smoking went to the store and came back with spare ribs and baby back ribs. Trimmed the spare St. Louis Style (at least I think I did), first time on trimming St. Louis style for me. Coated with DP Dizzy Dust and they just went on.

They look great. What was your method? Ribs are my next "1st" cook. Looks like the 321 method is popular.Slumming it in Aiken, SC.

No foil here, just straight through, started at 225* grid temp, after a few hours bumped to 275*, then towards the end bumped to 300* to finish. Took about 5 hours, results here, even had a nice smoke ring. Turned out perfect. My last few attempts have been lacking, really happy with these. Serves with sauce on the side, no one even took sauce.They/Them

How long do you smoke the almonds? Almond wood? Add anything to the almonds?Cooking on an XL and Medium in Bethesda, MD.

@Ragtop99 Here's where I did them the first time:Did these about the same, but today I just smoked them and put them in a Tupperware container. Next weekend I'll toss them with the OO, Salt, Chili Powder, etc and then roast them in the oven for 10-15 min. This idea came from @laserdoc85, he says it's way better.Here's the recipe reprinted:They/Them

Cold smoke. That's a challenge. On the link someone did it at 200* so I may try that over the holidays.Cooking on an XL and Medium in Bethesda, MD.
