Back In The Saddle - Chicken and avocado

I haven't been able to cook much lately, but we had family in town this weekend and I cooked a couple of dishes that we enjoyed previously. Did grilled avocados and Peruvian chicken with green sauce. For the chicken, cooked indirect at 400 until internal temperature hit 140 and then finished up raised direct; I really like the results with this method.

Looks good. Is that peanuts? Never used peanuts.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

@Caliking... Peel and halve the avocado, pour beaten egg and cheese in and wrap in bacon.Green egg, dead animal and alcohol. The "Boro".. TN

@caliking for this dish I lightly grill the avocado and lemons, then top the avocado with cherry tomatoes, pine nuts, fresh cut herbs, drizzle of olive oil and juice from lemons. Eat right out of shell.LBGE & SBGE. Central Texas.
