Success!!!

First time doing spatchcock chicken. Best work yet i've performed on the yard bird. Brined it for 6 hours. Added EVOO, Salt, Pepper, and Cajun Seasoning. It was absolutely great. Took the leftovers and made a smoked chicken salad. Looking forward to sandwhiches this week.
