I usually just go with straight horseradish sauce on mine, but do y'all have any different ideas? My wife can't take the heat from straight horseradish, so I was thinking about cutting in some mayo and possibly a couple more things. I'm about 10 degrees away from the beef coming off the smoker. Pix to come...

Maybe add a little sour cream and fresh herbs to the horseradish and mayo. Just a little. I'm with you on straight horseradish.

Mix mayonnaise, horseradish, lemon juice, salt, and pepper. The lemon juice will really lighten up the horseradish. Good luck.I cook. I eat. I repeat. Thornville, Ohio

Turned out great! Thx again, @Hibby! My wife and I both loved the sauce. Smoked the roast with JD Whiskey Barrel Oak Chips. Served up with some fresh squash and zucchini casserole...we picked the squash and zucchini from our garden this morning. We are excited about the garden...first time we've been able to keep one alive. lol
