They Stared at my Butt for Hours....

...but in the end, it was worth it![p]You may remember that I woke up at 6am yesterday to start a Boston Butt, only to realize it was tainted. It was about 11:30 am when I finally got home with a replacement butt, about 5.5 lbs. Knowing that I had guests coming over that evening, I just pulled it our of the plastic wrap and tossed it into the still-burning egg, and hoped for the best.[p]I followed Cat's advice and upped the temp. I cooked it at 225* until the internal temp hit 155 (at about 5pm), then I increased the temp to 300*. Finally, at about 8pm, the internal temp hit 190*. I'd been waiting for 200*, but decided to open up the egg and test it. My fork slid in and out easily, and when I twisted, the butt offered no resistance. I pulled it out and wrapped it in foil for al of 10 minutes. Then I pulled, they ate, they wept, they begged for more.[p]So after all the false starts, and with absolutely no seasonings or spices of any sort, it was still fantastic! Long live the egg!
