...when chicken and ABTs collide!

Thanks to @nashbama for the inspiration... these were a huge hit last night.

Chicken Bombs

I stuffed the jalapeños with a mixture of goat cheese and jack cheese:

Chicken Bombs

Wrapped it all up with bacon:

Chicken Bombs

Slathered them with Sticky Fingers Carolina Classic.

Chicken Bombs

And cooked raised direct for 45 minutes at about 350F.

Chicken Bombs

They rocked!

Thanks, @nashbama!

Looks awesome. Is "raised direct" when the grid is at gasket level but without the platesetter? Is there an easy way to do that without buying an additional accessory?

Did you use flattened breasts or boneless thighs? Thighs would probably stay moister or does the bacon do that with breasts? They look delicious, by the way.

I just got a medium for Christmas with lots of eggsesories to go with my smoker and Charbroil Infrared. These two have been redundant since!! Done all sorts from pizzas to pork shoulder. Love it.

Travis isn't coming either, Kristi.  He and Mickey only go to the Salado Eggfest.  But, I'll be there.  I made a special point to be there since you were coming.

Maybe, you can help Pam and I cook our Kalbi and Tequila Shrimp.

Awesome, love the use of goat cheese. My wife is dairy free so we use it all the time.

  • I made a special point to be there since you were coming.

Thank you, VI!  You're a real friend. ;))
We are really looking forward to meeting you and Pam (& eating your food!).

HDumptyEsq -- I used thighs, but butterflied breasts would work, too.

@Kristi - any advice on substitute for goat cheese?  I love it - but the Queen is not a fan - too tangy?  But I love the consistency and want to use it.  I know you cook with it all the time, would love any recommendations.  Thanks!

Beautiful!  I think they need mashed potatoes tho!
    ;)

I think next time I do stuffed chicken I might have to try raised direct.  The bacon looks soooo nice and crispy
    :@)

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

Hey Kristi, can I borrow your fire brick set up picture for a blog post that I'm working on?  I want to show an alternative to the double fire ring set up I used.  Thanks!!!!

Kristi, I hope to meet you on saturday.

  • milesbrown4 -- softened cream cheese works really well. It doesn't have much pizazz (imo) but you can jazz it up with shredded cheese and various seasonings.  Sometimes I mix goat cheese & cream cheese in my poppers.

NibbleMeThis -- definitely!  There are a couple in this Flickr set: http://www.flickr.com/photos/necessaryindulg/sets/72157627911604435/

Austin Egghead -- see you Saturday! :)

travisstrick -- How far are you from Austin?  and why aren't you going to the Fest?

Mickey -- I'm still sad. :(  I completely understand, but we will miss the opportunity to meet you this weekend.
