How long can Pork Butt rest?

Hello,[p]I have a 7 lb Butt that I cooked overnight. Pulled it at 10:00 AM when it reached 200 internal. Wrapped in foil, towels and stuffed in cooler. How long will this last? At what temp do I need to be concerned? I still have the wireless probe in the pork in the cooler and it is down to 165 with 3 hours left until dinner. What should I do? I remember seeing a reference to a safe temperature range but can't find it. Thanks in advance for your help.[p]Kenny

PackerFan,[p] You'll be fine for another couple of hours.
Just leave it in the cooler.[p]Chuck

GaDawg,[p]Thanks for the help. Is there a minimum safe temperature? I am down to 158. It just sounds low.[p]Thanks,
Kenny

PackerFan,
Since it's cooked, it shouldn't matter. If you're
real worried, put it in the oven @ 200 - 250. Leave
it in the foil.

PackerFan,
The "danger zone" is 40 - 140 degrees. You are fine for now. [p]TNW

PackerFan,
I would recommend not pulling the pork right off the grill, but towel wrapping it in the insulated cooler for as many hours as you need to hold it first. That way the butt stays HOT for hours because it is still whole. I've literally burned my fingers after 4 hours in a cooler.
