(Not quite)72 hour Beef Short Ribs

JayHawkEyeJayHawkEye Posts: 191
Well, couldn't quite make it to 72, but the ribs were still pretty good after 69 hours with the SideKic. I didn't get many pics as the family was hungry, but I will gladly do this again. I seasoned them with salt/pepper and seared on the egg. A touch to much salt, but the tenderness and texture was crazy good. Melted in the mouth! I used the short ribs from a steer we just got from a friend. The only downside was the amount of fat in these ribs that I wasn't counting on. SWMBO wasn't a fan of the fat, so I wound up pulling most of it to try to get some fat out. Can't wait for sammies this week.

Great that your first cook was 69hrs! Try some chicken breasts now.

  • They sure look good! I hope your family had something to nibble on while they were waiting for those!

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

Looks very good. Did you grill them after the sous vide?

Yes, I grilled them real quick. Had the agg still going from cooking some ingredient steaks. Just 30ish seconds a side.

Thanks, haven't tried the ribs yet but want to. I was worried they might fall apart on the grill
