Texafied Pimento Cheese Burger
This one is all @Hashmaker fault. I've been wanting to try one forever, but it never seemed to move up on my list until he made one last week here and said he'd like to see my take on it. From that moment, I knew it was on. I could have taken the easy way out and used store bought pimento cheese, but I thought it would be better if I made my own. Cast of characters minus the diced jalapeno
Mixed that all up and tossed it in the fridge to get happy together.
Lit the Egg and got it stabilized at 550. Only one patty as this was the last night for Mrs. G being on the road till July. Yippie!!
Let it cook for 4 minutes of so, then flipped and topped with 2 tablespoons of the pimento cheese
Pulled it after another 4 minutes of so and constructed my burger. Two slices of bacon on top, a slice of tomato on the bottom, telera rolls (rolls used to make Mexican tortas) that were toasted up in the bacon grease (why let a good thing go to waste?) and served up with some onion rings.
After a few bites, I had to put it down and text @Dyal_SC (we were texting through out the night) and let him know that I had just found my new favorite burger. So cheesey, ooey gooey meltedy perfection. So decadent. I was happy as a....I don't know. Something very happy. Thanks for the inspiration and motivation to get off my butt and finally make one, Hashmaker. I could go for another one right now.

@Hashmaker I doubled a recipe I found and added some cayenne and diced japs to it. Good on the burger, not so much standing alone on a sandwich. Too much heat.
- 4 ounces grated extra sharp cheddar cheese (I used Cracker Barrel)
- 4 ounces grated sharp cheese
- 6 tablespoons mayonnaise
- 2 tablespoon diced pimentos
- 1 teaspoon Worcestershire sauce
- 1/2 tsp cayenne pepper
- 1/2 tablespoon diced jalapeno
- Salt and black pepper

Dam that looks so good. I am kinda in the same boat as Griffin. My wife does not like pimento cheese. I will have to do a mix batch of burgers so I can try this.

As your norm, outstanding..... But, the rolls are a first for me. I use onion rolls, now got to find those and try them.... Never seen in store, but have not looked for them.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I made these last night and they turned out great!
I put the onion rings under the cheese with the bacon so it all got sealed under the cheese, and used a kaiser roll. Also fried in the bacon grease to a nice golden crisp. Way to go on this one bro, I will certainly be making them again.

@jlsm - there are just some things SWMBO'ed says I have to buy. Mayo has to be "light" or I get yelled at. Paper towels have to be Viva, or I get yelled at. Somethings are just not worth fighting about. At least I can get Duke's Mayo when I can find it.
@michigan_jason - glad you liked it. Like the idea of the onion rings under the bacon and cheese. They didn't get soggy? You take any pics?

No pics last night, they were gone way too fast! The onion rings were good and crispy, just cook them a little extra so it compensates. Next time I will take pics I promise! Great creation though, well done.

I have some chuck/short rib brown sugar onion jalapeno burgers in the freezer may need to thaw them and fire up the fryer for this. That pic in the 2nd post is wrong.
