I think that I have semi-mastered cooking various meat dishes on the egg. Over the weekend I made some of the best baby back ribs I have ever eaten. However, my side dishes were really disappointing. Nothing memorable at all! What is the point in making great brisket, pulled pork, or ribs if the rest of the meal is just so-so?
So, would any of you care to share your signature side dish recipes? Baked beans, coleslaw, potatoes, bread, etc... Thanks in advance for anyone's willingness to share with the group!

I added Miracle Whip to this for a more creamy version. To me the dressing tasted like Bob Evan's Colonial Dressing, if you've ever had that.

My favorite potato recipe is from the Pioneer Woman Crashed Potatoes simple and really tasty. I like fresh rosemary with mine. Our sides are pretty simple for us:
1. squash (acorn, delicata, or other) halved, with some coconut oil (or butter) and brown sugar
2. Grilled zucchini spears
3. Roasted corn on the cob

Don't exactly have recipes. I tend to improvise a lot. But here are some rules i follow.
For baked beans, as Egger fishlessman pointed out, they need to be baked. I find that the classic navy bean works best, after a soak in distilled water. Beware hard water, the beans will become tough. Then, in a DO at low temperature, 250 - 300F for at least 5 hours, adding fluid to the sauce as needed.
Mac n cheese. Use as many kinds of cheese as you can. Some tart goats cheese adds a lot. Put in lots of butter, and add non-fat evaporated milk. The extra protein in the evaporated milk will help keep the cheeses from breaking into oil and curds.
A little bit of good Spanish sweet smoked paprika can do wonders.
Bake 'taters before mashing. The flavor after roasting is more "potatoey."
If making potato salad, add some coarse mustard to the mix, and some mashed hard egg yolks. Buy some jowl bacon, cube it, and bake the cubes into bacon croutons.
Buy some really good sherry vinegar, and good olive oil. While most slaws are creamy, one w. just a vinaigrette works well w. pork seasoned w. a mostly sweet rub. Consider shredded brussel sprouts instead of cabbage. A minor flavor of celery seed or salt is usually a good thing.
Boring flavored foods are often helped by a dash of lemon juice.

Al's Hawaiian Coleslaw 16 oz bag cole slaw 8-12 oz mandarin oranges ( I like more swmbo likes less) 8 oz crushed pineapple 8 oz pineapple tidbits 1/3 cup broken up pecans 1 cup mayo Drain juice off all fruit. Combine all ingredients and chill for a couple hours and then enjoy.
