I got a wild hair up me bum and decided to try turbo shoulder with a unique rub mixture.
I usually just use EVOO as a base for my rub. This time I mixed equal parts molasses and toasted sesame oil and then sprinkled some Rufus Teague Spicy rub on there. For some reason that combination just sounded awesome at the time. We'll see how it turns out.
The first pic is with the base before the rub.

I guess I was thinking the carmalization (is that a word?) of the molasses would provide a bark-like texture.

"carmalization", no. "caramelizaton", yes. :P

To be straight forward, both the black strap 'lasses and the toasted sesame seem like good bases. But together? Hmmm... :-??
Do report back.

be careful that caramelization doesn't turn to burnt if you're doing higher turbo temps...should be ok if you're foiling after 160ish though.

If it doesn't work you caiuld always go butt a stump. Little Steven can join you. I still don't know what it means.

Good luck. I would have never thought of that. Let us know how it turns out. I do not think I like sesame with sweet flavors.
I would be careful with how high you get the temp with that oil too, even though listed smoke point is 350 - 420 F supposedly.

I see my abrasive sense of humor has earned me some infamy here.Badong said:MrCookingNurse said:My philosophy is usually keep it simple stupid. Why mess with a good thing.

You want infamy, try posting a pick of KY.

You may want to see a doctor about that pilonidal cyst. Trying to enjoy some butt with that in your butt can be a real pain in the....

The shoulder turned out great. Not as much bark as a "L&S" but great flavor and as crispy as I had hoped.
Quite happy!
