First off, thanks for all the feedback earlier this week when I was inquiring about my first flat.
I found a 6+ lb angus flat at Sam's, injected with beef broth, rubbed down and sprayed 3 times. I freaked out a little at 2 hours in b/c I was already at 159 IT. The "stall" kicked in and 2 hours later I was at 173 IT....amazing. I panned it from there and let it go another 2 hours at 275. After resting for an hour it was time to test the final product. All in all, I can't complain. It was tender and the family loved it.
Again, thanks for the help!
