  • Hashmaker, glad to hear you weren't offended by the comment about the 'look at my butt' post because it wasn't offensive or intended to be, in fact it wasn't even directed at your specific post (wasn't aware you even did one until you mentioned it above) but rather all posts with that title, yours may have been the 100th one...  and even more specifically to those that post the same thing over and over again.  Everyone does a butt post at some point & there's nothing wrong with that, but when someone has been around a few years & they're still repeatedly doing them, that's what I'm talking about.  Should they be stopped, of course not, people should post whatever they want and anyone here can choose to look or not look at them - I, speaking for myself, find them boring & not worth looking at.

Focker, 'haters'?  Are you serious?  Let me see, Hitler, Pol Pot, Ahmadinejad, "guy on bbq forum that opines multiple posts of same old food is dreadfully boring", all 'haters'?  I see more and more people every day throw that term around to label anyone that simply disagrees with their own opinion - do you not understand that diluting the term in such a manner has rendered it meaningless?

  • I guess if you're not going to look at what other people are doing, I have a hard time understanding what you're doing on this forum.  Case in point.  Yesterday Griffin started a discussion Quick Salmon Dinner.  How many pieces of salmon do I need to see?  When I looked he had cooked one with pesto.  I love salmon and I love pesto, but for some reason never put the two together.  If I han't looked, I may have never thought of it on my own.  Needless to say I'll be trying this combo over the weekend.  IMHO, that's what this forum is all about.  Post what you do to inspire and help others.

I guess then you missed my initial comment so let me repeat it to bring you up to speed.  I look for posts that may contain new methods or novel cooks, and in case you have not noticed there are plenty of them on here as there is no shortage of great cooks that post here.  True sometimes the title doesn't dispel the mystery of what may lie underneath a post if opened so I will sometimes open posts out of curiosity, but that doesn't fend off the sigh when it turns out to be the same old ham sandwich suggested by the thread title.

As for 'what this forum is all about', it's about whatever each member makes it all about for his/her own experience.  Some people read every word trying to learn as much as possible because perhaps they're inexperienced cooks, others like food porn & don't read a word, still others like the social aspect of hanging out & talking to friends that share a common interest.  They're all fine, for me I'm looking for what I stated above and if you see something wrong with that, well, I am not concerned

    Doc,

Back when my photobucket worked I would buy one off plates just for pics. Probably ended up with ten plates plus our regular stuff

I totally get this as we are starting to collect more and more plates just to vary it up a bit and keep it interesting.

  • I love the fancy photos people post here.  Inspiring.  But I hate cold food.  So I take fewer pictures than I should.

  • lolol.  The forum has spoken.  No more "bullying" or "intimidating" from me, although I never intended that. I only wanted to suggest an upgrade of the cooks for you all.  It was not appreciated.  I understand.

I'm done with pictures.  I think I'm also done with trying to post imaginative cooks.  If I post again, look for a mean spatchcock chicken from me.

Hope you're not serious.  I agree with those that appreciate your exquisite photos (something many of us will strive for) and the basic cook photos.   Made up a stir fry tonight inspired by you.  Keep it up!

Just to play devil's advocate (and NOT trying to ruffle feathers) - but, some of the BEST food I've ever eaten has come from "hole-in-the-wall" restaurants (for instance, the best fried chicken I've ever tasted was from Willie Mae's Scotch House in N'awlins).  There, she don't put no food on no fancy plates, or "gussy it up" w/ a bunch of garnishes - but boy it sure does taste good.

Yes, "fine" restaurants do take pride in the "presentation" - but you also PAY a hefty price for that as well.

I think of it like this - if I was blind, and you placed 2 plates in front of me, each w/ a steak - plate 1 had a steak from a fancy restaurant, replete w/ glazes, drizzles, garnishes, and it was served on a really expensive piece of fine China - however, the taste of the steak was just "OK".  Plate 2, however, was a steak from the Egg, but it had none of the "fancy" stuff, and was just on a regular plate.

As a blind person, which one do you think I'd eat?  ;)
Willie Mae's Scotch House was superb!  You know it's legit when a local is chilling at the bar with a holstered tabasco bottle.  My other fav in NOLA was Port of Call.

BTW...VI, keep posting your pics.  It's inspiring!  It's made me rethink my approach to presenting my food to the board.  While I still don't spend the time to plate appropriately, I definitely look for different ways to photograph my my grub prior to plating.  When I finally purchase a DSLR, I'll get more serious.  Another kiddo on the way next month and the wife is killing me with all these professionals i'm paying for.  My solution, buy a DSLR, have both of us go to classes and hopefully eliminate the need for 90% of the professional shoots. :D
Just a hack that makes some $hitty BBQ....
  • One of our favorite places for chinese food was a hole-in-the-wall in Chatanooga, TN called Yum-Yums.  I'm not sure they're still there as my sister-in-law moved from Chatenooga five years ago and we haven't been back since.  Never ate there because of they were a hole-in-the-wall.  Did I mention that before?  Dive? Certainly.  Good food?  No, Great!
