Looking for a great apple sausage recipe. I looked online but didn't see what I'm looking for. I know I can count on the great forum members for a killer recipe. Thanks.

    Couple of ideas:

    Sausage, Apple, Chicken
     
     
    A little experimenting resulted in some tasty chicken sausages.
     
    INGREDIENTS:  
    200 g    chicken skin and fat  
    1 kg    chicken meat (2 breasts and 6 or 7 thighs)  
    18 g    kosher salt  
    2- 1/2 g    black pepper  
     
    2 g    allspice (I added some more after a taste test - but didn't measure)  
    2 g    onion powder  
    8   sage leaves (and added another 4 after taste test)  
    230 g    Granny Smith Apple, peeled and diced (2 apples)

    Appetizer, Poultry, Side Dish

     Sausage, Pork, Apple, #1, Car Wash Mike
     
     
    INGREDIENTS:  
    2 Lbs    Lean ground pork  
    1   Red Delicious or 2 Granny Smith's apple finely chopped  
     
    4 oz    Homestyle Musselman's apple sauce.  
    1/4 cup    packed Brown sugar.  
    1/4 cup    bread crumbs.  
     
    Procedure:
    1 Mix all the stuff together. Let set in the fridge covered overnight. My experience, more flavor the next day.
    2 Inject or baste with pure maple syrup at some point in the cook.
    3 Add more brown sugar for flavor, bread crumbs to hold it together.
