Beef ribs today

We are going to cook some beef ribs today. Short ribs not Dino bones. Plan is to get the egg to 240-275 grate indirect. Will coat the ribs wih some DP cowlick. Will smoke with some hickory and cherry chunks. My guess is ~ 4-5 hours? Sound right? May put he maverick for probe in the center of one of the ribs just to judge how the cook is coming along.

Question. Is it the same with the bend/ toothpick test to te when thy are done or are they to be coked to a certain temp?

    Actually hey are not short ribs but rather long ribs individual.

    Cook the same?

    Well they came out good but not allot of meat.  The beef ribs shrink allot more than pork ribs.  Will need to buy more next time (And they are expensive).
