Getting up at 4am to put 5 lb pork butt on egg for dinner tomorrow. This will be my first and I have seen different opinions. What do ya'll say, fat up or down?
Thanks and happy Fourth!

I put 2 on tonight and I put the cap down.  I also trimmed it for more bark.

Rockwall Texas, just east of Dallas where the humidity and heat meet! Life is too short to get caught in the fast lane behind somebody slow!
