Tonights Cook...Grilled Artichokes and Salmon

Grilled artichoke, cedar plank salmon and grilled shrimp. It was eggcellent! Last one is of my wife and baby enjoying the chokes.

Yeah we are trying to eat a bit healthier. Artichokes were awesome, I will definitely do them again. Costco had a bag of 4 big ones for $5 or so. We made too much food though, they were far more filling than we anticipated.

Looks good.. I want to plant some artichoke this year. I am in same boat, I want to eat healthier because I figure if my children are exposed to veggies they have higher chance to like them. My 3 yr old loves them, he eats broccoli, corn, edamame (try that boiled with sea salt for your lil one), frozen peas, frozen corn, carrots.. I didn't like veggies until I was 24 and out of my folks house haha.

My kiddo is 13 months. He ate everything he could fit in his mouth, but now he is the pickiest kid ever. Total fail.

I cut the tops off, then cut in half lengthwise. Put them in a bowl of water with some lemon juice to avoid browning. Then I boiled them for 15 mins and made an olive oil/lemon juice mix to baste them in. Grilled direct around 400-450 basting and turning constantly until done. No butter on this one and it tasted great!

I boiled mine for 45mi so its faster on the grill and can serve them quite fast. You should try a Brie cheese dip!FelipeMen, easier fed than understood!!
