What's your favorite vegetable recipe on the Egg?

I've been wanting to cook more vegetables on the Egg. I primarily cook large amounts of meat, which are fantastic but I've really moved away from my Thai cuisine that had a lot of vegetables, and much less meat. However, I'm not looking to stir fry on the egg at this point.
So I ask you, what is your favorite way to cook veggies on the Egg? Healthy would be better, but I'm up for any recipes or ideas. Just not looking for bacon wrapped, etc. I'm talking just grilling vegetables.

I do sliced zucchini, yellow squash, onions, peppers ( all kinds) tomatoes, mushrooms, eggplant, corn on the cob and asparagus. Toss veggies with olive oil, salt, pepper and balsamic vinegar and grill.Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

Granny: Thats actually exactly what I've done so far, and they were really good. I'm surprised you named my exact recipe lol. Hoping to hear some new to me ways also. I've done squash, zucchini, and eggplant that way.

Great minds work alike. Try woking veggies with different sauces or salad dressing. When I have leftovers I'll too them with some lettuce or spinach and feta cheese.Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

Cauliflower roasted is very good. If you enjoy cauliflower of coarse. But then again I roast it with the same ingredients you two described but without vinegar.

I've been doing this a lot lately, really good, made it tonight actually.
I do add a little feta to it also.

Sliced brussel sprouts in olive oil and salt on a cast iron griddle. Amazing!

Asparagus is my favorite vegetable on the grill. Olive oil some seasoning of your choice and you'll be satisfied.

I love doing stuffed mustrooms and jalapenos wrapped in bacon.. whats healthy to you would depend on your diet? i eat high fat low carb so veggies wrapped in bacon works for me! I have yet to try asparagus as someone mentioned but i bet its great.

I cooked zucks., yellow squash, red onion, porto schrooms, bell pepper the other night. Tossed in EVOO, salt and pepper. Just as they were getting soft, I threw in a couple of handfuls of pineapple chunks.

Grilled artichokes without a doubt. Slice artichoke in half lengthways, clean out the thistles. Par boil in salted water 5 minutes. Then marinate an hour or so in EVOO and balsamic vinegar, crushed garlic and a little brown sugar and little crushed red pepper flakes. Grill on the egg over direct medium heat until you get some nice grill marks on each side while brushing with more of the marinade. Then serve with a lemon garlic aioli to dip in. (Mayonnaise, crushed garlic, lemon juice, salt, pepper and a little honey) They're awesome.

Zuccini, stuffed Jalapenos and Corn.
I tried many different methods for corn grill and my favorite is to pull a few top outer husks off, (but keep enough husk shell to fully cover kernels back up), remove silk, then paint exposed kernels with melted butter and dust with a smokey bbq dry rub. Then pull husks back up tied tight with an extra removed husk, then gril raised direct, turning often.Columbus, OH

Also, if you have the time, try to soak the corn in cold water for about and hour BEFORE the husk removal, butter, dry rub etc.Columbus, OH

I'm so glad you said that Howdy because they are my favs also. I slice potatoes about 1/4 in and put in a bowl with EVOO and sea salt and black pepper. Cook direct on a cheap alum pan with holes. Awesome -

The book "BBQ Makes Everything Better" has a recipe for Sweet Potato Fire Fries. Might be stretching the definition of vegetables, but they are awesome!

I marinate for an hour or more in soy sauce. I do at around 300 for 8-10 minutes.
