Anyone know where I can get a chart of what the doneness of my meat should by temperature, such as med rare or well temp for steak etc?

buy a thermapen... it comes with a chart... you will not regret it

Go with the thermapen...but until then here is one: http://whatscookingamerica.net/Information/MeatTemperatureChart.htmRemember though, meats will continue to cook after you remove them from the BGE, so you want to go a little under the target temp and let it rise while it is resting.

this chart is a good starting place, it needs some fine tuning for meat thicknesses and cooking style but its as close as you can get as a reference point to start with
