The daughter is visiting with her boyfriend, and the spouse decided to toss caution to the wind. WE WANT PIZZA!. So I made a trip to the store, then I remembered I had traded my peel to my brother, and the larger replacement had not arrived. So I bought a cookie sheet to use. It worked better than my original BGE peeler.
This crust turned out almost restaurant thin and crispy. So close, and really good.

XL, platesetter legs up, grid, stone. Let it heat a long time so the stone was hot. Target temp 400 to match the baker's recommendation on the dough.
Dough well rolled out with flour, and done on parchment paper.
Sauce and garlic, a little cheese, peppers and onions, a little more cheese, pepperoni and the final cheese.
Stone cooled with wet wipe, then pie placed with paper. Paper removed at 5 minutes. Rotated every 5 minutes for 20 minutes.

No, just grab the edge and slide it out.
