NY Strip/Blue Cheese

Has anyone topped their strip with blue cheese before? I've eaten a thousand steaks but never topped with blue cheese. All your white table cloth steak houses offer that option. I'm grilling a NY Strip tomorrow night and thought about throwing blue cheese on it. I wanted to get everyone's thoughts.

I suggest blue cheese butter...take some butter, let it stay out to room temp to soften, mix in blue cheese... make into balls or leave as is, refridgerate... then add on top of steak while steak is hot to melt...

I love blue cheese crumbles on my steak. I usually put them on about 5 minutes before I pull the steak. I would suggest trying it on a small part of the steak the first time to make sure you like it.Thanks, Mike "Live in such a way that if anyone should speak badly of you, no one will believe it."

I love any kind of compound butter on my steak. I usually do some herbs and garlic compound butter....Large BGE

I've done horseradish on them and parmesan on them. I would think that blue cheese would be great.

Blue cheese on strip steak is one of my favorites. Its also great on burgers to.

While they say Blue Cheese, it may in-fact be Gorgonzola (Italian Blue Cheese) - which btw is VERY good on a NY Strip. I have even had it on Filet medallions in an Alfredo sauce over linguine. Very Good!!!

I always brush with garlic butter and top with some blue cheese in the center of the steak a few minutes before it's done. No better combination in my opinion.Dunedin, FL

While butter-makes-it-better -- not a blue cheese fan.
I think its Ruth Chris's that does the butter on the sizzlin steak. Although - if I was to see a picture -- I might reconsider the blue cheese -- Mrs Boatbum orders maytag shipped to the house - would be a hit with her.

I am not a fan of blue cheese, but those that are love it on a steak. Sparks, NYC smothers it when asked - they have a steak Fromage smothered with Roquefort cheese - wife gets it when we go.Post edited from before - I screwed up the cheese at Sparks

This is good on steak if you are a bleu cheese fan.
1 1/2 cups heavy cream
2 ounces crumbled Roquefort cheese
1/2 tsp kosher salt
1/4 tsp black pepper
1Tbls chives
Boil heavy cream at a low boil until thick and creamy.
Remove pan from heat, add cheese, salt, pepper, and chives. Whisk until cheese melts.

I made blue cheese compound butter and used cambezola which is more like a brie and my wife liked it, she hates blue cheese.

4 Tablespoons Butter
•1 whole Very Large Yellow Onion, Sliced
•2cup Heavy cream
• ½ cups Crumbled Blue Cheese or Gorgonzola
Sauté onions in 4 tablespoons butter over high heat. Cook for 5 to 7
minutes, or until dark and caramelized. Reduce heat to simmer and pour in
cream. Cook for 3 to 5 minutes. Stir in blue cheese until melted. Serve
This is an awesome sauce for steaks. It's been a hit every time I have served it.

I made walnut gorgonzola butter last night to put on a couple filets. It was really good probably the best filet I have ever had. Recipe came from Steve Raichlen rubs book.
Quarter cup walnuts toasted, stick of salted butter room temp, 2 oz gorgonzola, 1/2 tsp black pepper. Put walnuts in food processor first and chop then add the rest of the ingredients and process again. I put a slab of the butter on the steaks while they were domed resting. -
Goat cheese is real good too.

Great Lakes Gourmet makes a Zip-It Blue Cheese steak sauce. It comes in an eight ounce jar and it is basically a paste of blue cheese and cream. You warm it in a sauce pan with unsalted butter. MONEY!
