So, I just ordered a Thermapen...

Looking forward to testing it out when I get it later this week. I had a couple of question on a couple of things. In regards to steak, what temp to you pull them at for med rare, or say medium? Also, how do you check the steak to get the temps without losing all the juices after you probe the steak? I have always wondered that. Any other tips or advice. TIA!
