direct heat wings

cooking some wings tonight i like them crispy. gonna do direct heat at 375 temp. flip them every 10 mins. for about 30 mins, the roll em in hot sauce. anyone else cook them similar..

I go indirect with dry rubbed wings at 350,cook til done,Put in a covered bowl with sauce,Shake em up. Put back on grill til they are glazed.LET'S EAT

High and direct is good. At the standard grid level you will need to watch them closely.

I prefer indirect @ 400 or so. Takes the chance of burning them out of the picture. Skin still gets crispy. Best of both worlds.

chokeon do you put anything on the skin, im not using a dry rub cause my hot sauce has plenty of flavor

I usually put them in a zip lock bag with some dry rub and shake 'em up for a light coating of spice. Then I'll toss a little sauce on after. Don't suppose you'd need the dry rub as your hot sauce will probably take over the flavor anyway.

Try a light dusting of cornstarch before you put them on.

Did the wings direct @275 raised grate, about 30 minutes. Used VI's raspberry chipotle sauce, along with some brie with the sauce on a cedar plank. I let the brie go a little to long, but it was still way good. The wings were excellent.

i did them at 400 indirect nothing on them, flipped them about 3 times. 35 - 40 min. put them in a bowl with my hot sauce and a sprinkle of rudys dry rub (i put it on everything) just kegged our first black IPA. poured a big mug full. if i ever get the electric chair this would be my last meal. they were crisp on the outside and juicy on the inside. thank for all the info. as soon as i figure out how to send pics from iphone i ll send photos

Sounds good jscarfo....as far as I know you can't post pics directly from iPhone(without something like photobucket)...you need to get the pics onto your computer and then you can just use the attach a file "button".

I use an indirect using the 30-20-10 process (30 mins, turn 20 mins, toss in sauce, 10 mins).Also as someone mentioned above corn starch mixed into any rub helps with the crispyness.Works out OK:

i do them 3oo/325 raised grid direct. start skin down, check at ten min, jiggle them loose but no flip, another ten min, check again, if getting crispy then flip. if not crispy, jiggle again and another ten miniutes. when crisping up, flip. they only need to be crispy on the one side

i charge my phone off my computer, when you plug it in a screen comes up it it will say something about camera click on it it will tell you what to do it will tell you to put your pics in a folder just name the folder from there you can retrieve them for the forum if yur stil not sure ill give you my cell no
