I cooked up one of the small ones. It was very good.

Did you age it in the cryo or is that something else? It looks pretty tasty Al.

I took it out of the bag after the pic. I had one Drybag left, but not big enough. I dried it in open air. It was done in this refrig. He cut it up before I got there to ake a pic of the chunk of meat.

Al just to be safe you may wish to send another to Texas for testing :laugh:Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
