You might try cutting them in half and roasting 350-375F for 30-45 minutes, cooling then place in a jar and cover with vinegar and seasonings, refrigerate and try in a few days. PS please report back as that sounds great!

That is very similar to the way Lloyds grandmother made her pickled cabbage.Large, small and mini now Egging in Rowlett Tx
