Sorry for not being around too much but my day job, house, competition team, the BGE distribution, catering and my Rubs kept me going at 200 % for the last year.
I keep lurking every now and then when im on the road but typing is a major PITA on the mobile phone...
Anyway, today i found the time to cook and take pics and even post them.
Made some MOINK Balls made out of dry aged american Beef, stuffed with roasted lobster and garlic and wrapped in serrano ham. I cooked them on the mini egg on top of a cherry plank with some rosemary and olive twigs for smoke. Glaze was red wine Jelly and i also topped them with some parmesan cheese and chili flakes.
