Pork loin
Partly rolled, partly butterflied, (mostly butchered), then pounded out to even thickness. Sautéed 1 cup baby spinach, 2 shallots, 3 cloves garlic 1/4cup of Marcona almonds (pounded to small bits), salt, pepper.
Cooled filling down to RT. Added palm full dried cranberries (chopped) and 12 thin slices of Cojita goat cheese.
Placed filling and cheese in pork and rolled. Tied with string. On egg at 325 for about 45 minute until internal temp read 130. Tented and rested for 15 minutes
Sliced and drizzled with Rothchild Farm Thai Sweet Chili dipping sauce. Very tasty.

Boy it's hot over there. I almost moved to Austin while living and working in Houston back in the early 80's. Long story short I wound up in Bradenton, Florida but then I found my way here in Tennessee. -
Joan, that is so creative! Pork and fruit and the aromatics...it sounds delicious.
I lived in Houston for four years but I don't think it ever got to 102°. Only the humidity got that high. You could have wrung me out like a sponge. That was way back in the days of window air conditioners.

Nice roast Joan. Yes to being inside...Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Looking good, did a stuffed loin this fathers day, got even less pictures than you did . Went dead simple just garlic, thyme and rosemary. Not near a fancy as yours but it was good anyway.
