Just received my new Maverick. Should I trust it to be accurate to within 1 degree as they advertise or should I check it out? And if so, whats the best way?

I got mine 2 days ago and checked both probes in boiling water. They both read 212, but at my altitude they should have read 211. I was fairly impressed. Close enough for jazz.
