I got my stoker last week and I fired it up with some ribs. I had the probe clipped to the BGE thermometer. The stoker said I was at 225 the egg said I was at 185. So I really didn't know what to do. So I went with the egg temp. Today I did a boiling water test. BGE Thermometer was +35 degrees off.. The Stoker probes were +2, +3, +2. I have been using it about a year now.. I have made some great cooks with it. I guess I need to buy a new thermometer.

no - just re-calibrate your dome thermometer - no great shakes to do that!Re-gasketing America one yard at a time.

How do you calibrate it?
-
Having just calibrated mine last night using instructions found on this forum, it is no big deal. You put a 7/16 wrench on the nut located on the back of your thermometer. Dip the probe into boiling water and turn the nut slightly in either direction until your thermometer reads 212°.

Just for kicks I checked my Thermapen it was dead on 211.8

This dilemma reminds me of the quotation: "The man with one watch knows what time it is; the man with two watches is never quite sure what time it is." The other posts about calibrating your dome thermometer are correct.
