Spider rig steaks & a red peanut curry sauce

I have really been enjoying using the spider rig from Ceramic Grill store!
That little difference in distance from the coals makes a huge difference. I'm using it with a Craycort 14.5" grate
I'm working on a red peanut curry sauce for beef that is similar to Evil Jungle Princess sauce from Ling and Louie's. Anyone have any good ideas for such a sauce?
Here's my first attempt:
1 Tbsp butter
1 small shallot, finely diced
1/2 cup Mr. Yoshida's Original sauce (yeriyaki)
1/2 cup peanut butter
1 Tbsp sriracha sauce
2 Tbsp lime juice
1 tsp red pepper flake
1/4 tsp curry powder
2 Tbsp cream of coconut (not coconut milk)
Saute the shallot in butter for 2-3 minutes.
Whisk in the other ingredients in and simmer for until thickened, about 5 minutes.
Very good but needs some tweaking to be perfect. I'm thinking adding garlic and using curry paste instead of powder.

Those are some of the Manhattan fillet I did over the weekend, actually cut from a strip loin. The third pic is also one of those two.

Yeah but the sauce still needs a little something. I'll be trying a few variations of this until I get that right balance.

Yeah, I am a big proponent of "a good steak doesn't need much other than pepper, salt and fire". But I was just craving the sauce I had in Arizona, I had all those fillets on hand, and thought I'd play around.Knoxville, TN
