Getting ready to cook a couple of pork tenderloins and the coals are not seeming to want to stay lite right. I cooked for the first time on Wednesday and the coals lite fine, but not sure what the problem is now. Also when I tried to calibrate my temp gage I got it set to 212 when water boils, but now it is just stuck on 100 when its taken out of the water. What's my problem??

To clarify how to lite and get temp set. For example 350, when I lite the coals within 5 or 10 mins the temp rapidly climbs. At the point that it reaches 350 is that when I should shut the bottom vent and daisy a little?

what temp is it getting to? dome open or close?
I usually dont put the daisy on untill it is fairly stable at my target temp. let it rise untill it is within 50 of your target, then slowly shut it down. -
I stir my goals first to make sure nothing is glogging the holes in the bottom. Then add fresh goal. Place a starter block in the middle of some smaller peices and light it. I then open daisy full (or take it off) and the bottom vent full. I also learned to let it burn until clear to avoid the chemical taste.
Once it gets to the temp I want I start adjusting the vents. Practice. -
Yeah I had the daisy off and it got to around 400. I put the daisy on and closed a litte so the temp fell to around 360-375. Not sure why the coals were not wanting to light tonight. Got the tenderloins going though. They have been on for about 15 mins on direct. Time to turn um!!

I always stir the old lump prior to lighting, also whn I light, I leave the dome open until several pices of lump are lit, the close the dome., finaly, you need a wiggle rod to clean out the grate holes from the bottom.
