Did ya really think all I cooked was some Spam? :blink: This is MY idea of a MEAT tray.First a Chuckie(ALMOST 5 pounds).Gettin her seared up,pulled after the sear and threw on a pastrami and a plain outta da bag corned beef.

Gettin a sear.
Gotta sear the sides too.
Plain corned beef and pastrami gettin happy.

Hoss that Tito's is just about 45 miles down the road in Austin. You come out to the Salado Egghead Gathering and I will buy you a new bottle :laugh:
Or give you the one in my closet...... good stuff....Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -

I always wanted to do a taste test comparison of corned beef and pastrami. Please post the results. Thanks.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

I got it at Walmart.It will weigh up to 11 lbs.It does lbs/oz or grams and a bunch of other stuff that I never use.The box just says Mainstays.

Actually the corned beef, plain ,tasted better to me than the pastrami.It was a LOT less trouble too.However,the one I pastramied was a Half n Half.Half flat and half point.It was marked FLAT.LIARS.The CB one was ALL FLAT.that could have been the difference.The Pastrami had a 1/4-1/3 inch fat strip between it :(
